Before I
misplace this recipe again, I am posting here as well as typing up to add to
our Tried & Approved Recipe Collection. This is an easy meatloaf
recipe with a sweet sauce that is spooned over each little loaf before popping
it into the oven. I always half the ketchup sauce as a whole batch is too
much. Everyone in the family likes these mini meatloaves.
Li’l Cheddar Meat
Loaves
Yield: 8 servings.
1 egg
¾ cup
milk
1 cup (4
ounces) shredded cheddar cheese
½ cup
quick-cooking oats
½ cup
chopped onion
1 tsp.
salt
1 lb.
lean ground beef
In a
bowl, beat the egg and milk. Stir in cheese,
oats, onion and salt. Add beef and mix
well. Shape into eight loaves; place in
a greased 13” x 9” x 2” baking dish.
2/3 cup
ketchup
½ cup
packed brown sugar
1 ½ tsp.
prepared mustard
Combine
ketchup, brown sugar and prepared mustard (I half the recipe); spoon over
loaves.
Bake,
uncovered, at 350˚, for 45 minutes or until meat is no longer pink and a meat
thermometer reads 160˚.
