February is almost gone and it seems like I am hearing more and more people say how tired they feel and everyone is coughing, sneezing, and blowing their nose.

And then, Wednesday night, I was tired. We had a busy day – that is what I wanted to blame it on. We had mass so the extra running around and hurry, hurry, hurry just wore me out. But I was tired. After we tucked the kids in, it really hit me. I told the Big Guy, “I’m going to bed.” And I did. Still, 4:35 a.m. came too quick. And I felt it. Something wasn’t right. A little foggy and still a little tired. After showering, I decided to try a ginger tea recipe. I had fresh ginger in the refrigerator so I found the recipe and made half a batch. I know ginger can add a hot bite to tea but with the honey and lemon, it sounded so good. Plus fresh ginger, honey, and lemon boast a healthy dose of vitamin C, as well as antioxidant, antibacterial, and anti-inflammatory agents.
Let’s just say, I love this tea and I heated what was left in the pan and took it with me on the commute to work. Yummy! I am anxious to try the cold version as well – just not yet. I still need hot liquids – it’s February after all!
Ginger Lemon Tea
1-inch knob of fresh ginger, peeled and finely grated
1-2 lemons, juiced
¼ cup honey
Pinch of salt (I didn’t add)
4 cups of water
Pour the water into a saucepan and add the ginger; bring to a boil. Reduce the heat, add the lemon juice, honey and salt; simmer for 5 minutes. Strain and enjoy!
For those hot summer days:
Make a concentrate by using only 1-2 cups of water. Mix the chilled concentrate with 2-3 cups of club soda. Serve over ice.
